Assessment of Human Consumption Risk for Heavy Metals in Various Shellfish Species

摘  要: Analyzing the concentration of heavy metals in various shellfish species depending on the organ, season, or growth environment, and then comparing the heavy metals concentration with the maximum limit standards to ensure food safety. Estimated daily intake (EDI) compared with the oral reference dose established by US Environmental Protection Agency (USEPA) and FAO/WHO Expert Committee on Food (JECFA) can be used to estimate Hazard Quotient (HQ) and assess the potential consumption health risks of heavy metals in shellfish. The results showed that the concentration of heavy metals in shellfish sample were higher in the autumn, and different heavy metals accumulated varied in the growth environment. Although the concentration of some heavy metals in the shellfish sample exceeded the specified maximum limit standards, the hazard quotient (HI) values were all below 1, there was no human health risk of consumption from all shellfish sample. However, due to the accumulation of higher concentrations of heavy metals in the internal organ of shellfish, the result suggest that consumption of flesh after removing the internal organ of shellfish is a suitable way for reducing heavy metals exposure.
