The dry and wet processing methods are commonly applied for the coffee bean processing. Other than that, bio-processing method is a distinctive and special coffee processing technique. The coffee cherry was blended into animal feed, and then digested through the animal’s gastrointestinal tract. The bio-processed coffee bean was collected from the excretion of the animals, so called animal coffee. Elephant dung coffee is a well-known animal coffee, and famous with its smooth flavor. Due to its limited productivity, it becomes one of the most expensive coffees in the world. This study aims to investigate the antioxidant activities and volatile compositions of elephant dung coffee compared to normally processed coffees. The results showed, the antioxidant activities of green beans in all treatments are higher than the others roasted beans. As roasting level from light extended to dark, the antioxidant activities reduced. Regarding to the volatile compositions, the discriminant markers for elephant dung coffee are 3-methyl-1-butanol, 2-methyl-1-butanol, 2-furfurylfuran and 3-penten-2-one. Moreover, coffee pulps completely digested or not digested were also shown difference. The report can help the further understanding of the impact of processing methods and developing solutions for coffee authentication and quality control.
