Total diet study (TDS) is an assessment method of the certain chemical content in all meals in a country or region, their dietary intake, and their exposure to related chemicals by detecting food samples which are close to people's actual consumption status. Lead (Pb), arsenic (As), inorganic arsenic (iAs), cadmium (Cd), mercury (Hg), methyl mercury (MeHg), chromium (Cr), and aluminum (Al) are the eight common heavy metals and can cause serious harm to human health. The aim of this study is using TDS to evaluate contamination levels and associated safety issues of the eight common heavy metals of the residents in China. The health risks of residents in China were assessed by comparing the estimated daily intake (EDI) with adequate intake (AI) for Cr, and the estimated dietary exposure (EDE) with the reference dose (RfD) for Al, As, iAs, Cd, Hg, MeHg, and Pb. According to the results, there might be some potential risks to the 2 to 6-year-old population due to exposure to Pb and Al, which MOE and PTWI% were 1.18 and 71.74%. Cereals and cereal products was the main
contamination of Al in the northern area of china. Aquatic foods were the important dietary exposure source for As, Hg, and MeHg which their hazard quotients (HQs) were all >1, especially for the residents from coastal regions. Moreover, the average HQ of As was about 6.49, indicating that the dietary exposure of As of China's residents was worthy of attention. Among the five Chinese TDSs, Cd was the only heavy metals of dietary exposure that increased year by year. Cereals exhibited the highest increase in dietary consumption in the 5th China TDS, and also were the main dietary source of Cd. Therefore, this study recommends that the dietary exposure of As and Cd of China's
residents and the contamination of heavy metals in cereals and cereal products should be further considered.
