Salmonella contamination in chicken is a leading cause of foodborne diseases worldwide. To investigate the risks associated with Salmonella contamination in yellow-feathered broiler chicken supply chains in China, a quantitative microbial risk assessment (QMRA) model was
developed. Sensitivity analysis was conducted to identify critical control points along the supply chain, and scenario analysis was used to compare the effectiveness of various intervention strategies, such as alternative processing strategies in slaughterhouses and different storage conditions. The model estimated that the mean predicted probability of illness per serving was 1.1 × 10−8 for the baseline. Full cooking, reducing farm contamination, chlorine concentrations in chilling, and cross-contamination in wholesale were found to be the most
significant factors in reducing health risk. Scenario analysis indicated that post-evisceration spraying with a combination of electrolyzed water and sodium hypochlorite could result in the greatest relative risk reduction (343.8-fold reduction). At the risk management level, risk benefit analysis (RBA) was used to compare the risks and benefits of implementing interventions. The RBA model recommended the adoption of biosecurity measures on farms, better control of carcass washings and chiller tank management, and information placement on packages to reduce the risk of Salmonella contamination. QMRA confirmed the benefits of these control measures, and the RBA model can be helpful in managing food safety issues.
