Quantitative microbiological risk assessments for Salmonella in chicken and pig products

摘  要: Salmonellosis is one of the major foodborne diseases in the world. Chinese data on initial loads of Salmonella in chicken carcasses sold at retail, storage time and handling of raw chicken meat in household kitchens and confirmatory transfer rates of Salmonella among different kitchen objects were collected. Only one third of Chinese families in the samples separated the cutting board between raw and ready-to-eat foods. A significant decrease in the risk of salmonellosis could be achieved by reducing the cross-contamination. A farm-to-consumption quantitative microbiological risk assessment (QMRA) for Salmonella in pigs in the European Union (EU) has been developed for the European Food Safety Authority (EFSA) . For the case study EU Member States the average probability of illness was estimated to be between 1 in 100,000 and 1 in 10 million servings given consumption of one of the three product types considered. The vast majority of human risk derives from infected pigs with a high concentration of Salmonella in their feces. QMRA can be a complementary approach to epidemiological investigations.
