Antioxidation and tyrosinase inhibitory ability of coffee by-products

摘  要: Coffee by-products including cherry husk, coffee pulp, silver skin, and spent coffee grounds (SCG). Coffee pulp and SCG are rich in chlorogenic acid (CGA) and linoleic acid (LA). CGA has anti-cancer, anti-inflammatory, and antioxidant properties. Its metabolites can restraint tyrosinase (TYR) from producing melanin, lowering the risk of melanoma. LA is an essential unsaturated fatty acid for cosmetics that speeds up the
decomposition of TYR and inhibits the capacity to produce melanin. The goal of these two papers were to extract coffee by-products and investigate their physical and chemical characteristics, antioxidant and TYR inhibiting capacity. Coffee pulp extracts (CPE) produced from Arabica coffee pulp by extracting with 50% ethanol, had the greatest CGA, TPC, and TFC content. Also, it has the lowest IC50 values of DPPH, ABTS radical scavenging capacity, reducing power, and the best antioxidant capabilities. However, the effectiveness of CPE to inhibit TYR was found the best in the 70% ethanol extracted. The yield, LA content, and UFA/SFA ratio of SCG oil, which obtained from maceration at room temperature for 1 hour, were higher than the other extraction methods. LA content of SCG oil obtained by modification with complexation method increased to 53.24% and the UFA/SFA ratio climbed to 9.20. LA-SCG has a strong capacity to prevent melanogenesis and is non-cytotoxic to B16F10 melanoma cells and normal human skin fibroblasts. In conclusion, coffee pulp and coffee grounds extracts have strong antioxidant activity, anti-aging, and TYR inhibiting ability, which may be applied to goods to accomplish anti-aging and whitening benefits, as well as achieving
